El Paso Curriculum for Health Literacy includes a five-step model to follow in teaching health literacy. Health and safety topics include diabetes, breast health, menopause, lead poisoning, household hazards, and nutrition.

Adult Education Health Literacy Toolkit
The Virginia Department of Health has developed a comprehensive Adult Education Health Literacy Toolkit for downloading and printing. The Toolkit contains sections on the importance of health literacy, teaching health topics, available resources, and addressing teachers’ concerns about teaching health.

EL Civics Health Literacy Curriculum
The Charlottesville City School's Adult Education Program Web site contains an EL Civics Health Literacy curriculum. Of particular note is the unit on informing students of their rights and responsibilities in using the US health care system.

Eating Well, Living Well: Nutrition Education for Adult ESL Programs
The “Eating Well, Living Well” project is part of the California Nutrition Network for Active Healthy Families (Network), funded by the U.S. Department of Agriculture Food Stamp Program. Sponsored by the San Diego Community College District, Continuing Education Adult English as A Second Language Program, the Network has as its mission to enable California families eligible for food stamps to adopt healthy eating patterns as part of an active, healthy lifestyle. The site contains nutrition lesson plans that educators can integrate into an adult ESL curriculum.
